Built in 2015 on the site of the former Imperial Distillery, Dalmunach Distillery blends modern technology with exceptional energy efficiency. It uses 40% less gas/electricity and 15% less water than the industry average, substantially reducing costs and carbon footprint for its annual production of 10,000,000 litres.
Innovative Construction
The demolition of the historic Imperial Distillery surprised many. However, credit is due to the innovative owners who recycled elements of the old distillery in Dalmunach’s construction.
Supply of Famous Blends and Aging Potential
Dalmunach currently supplies single malt whisky for famous blends such as Chivas Regal, Ballantine’s, and Royal Salute. The whiskies used in these blends have various age requirements, with the youngest whisky in Chivas Regal being 12 years old and 21 years old for Royal Salute. This indicates a significant aging process still to come.
Versatility and Independent Bottlings
Approximately 50 independent bottlings of Dalmunach whisky have been released, demonstrating its versatility. The Duncan Taylor Dalmunach Octave Cask has received particularly high praise from whisky enthusiasts.
Whisky Production
With a fermentation time of 56-62 hours, Dalmunach has four pairs of large stills—wash stills holding 28,000 litres and spirit stills holding 18,000 litres. Dalmunach whisky has shown potential for various aging strategies, including bottling at a young age. Milestone ages of 10, 12, 15, and 18 years are eagerly anticipated by whisky enthusiasts.
